Origins
Inspired by the early black teas that reached Shetland through Bergen, Rotterdam and Hamburg, this blend draws on traditional East Frisian recipes, combining our finest Assam with gently fragrant Ceylon varieties. Refined for Shetland’s soft, peat-filtered waters, it opens with heathered botanicals when brewed lightly, revealing richer depths in tow.

Origins
Inspired by Shetland’s beloved Sunday Teas - where community halls fill with home baking, friendly faces and an endless procession of teacups - this cherished tea recipe offers a moment of comfort and nostalgia like no other.
Fine black teas and creamy Milk Oolong, with added notes of buttery malt, evoke the scent and flavour of Shetland shortbread, bannocks and bakes. Not overly sweet, the blend is beautifully rounded by the addition of milk. For those with a sweet tooth, a little brown sugar brings out the richness of traybakes and fancies!

GIFFORD GREY
Type
An exquisite blend of black tea, bergamot, rose petals and juniper.
Origins
Inspired by the golden age of North Sea trade and the rise of Shetland's merchant classes, this blend evokes tales of adventure, romance and intrigue. As a taste for luxuries grew alongside heightened taxation, our 18th century shipping routes soon carried more than fish and timber. Hidden cargoes of brandy, tobacco, teas and gin slipped from hold through misty cove and secret passageway.
A nod to the Giffords of Busta House, whose wealth and ghosts of lost love remain legend to this day. A perfume of Italian bergamot lingers with walled garden rose. Gin's notes of juniper cutting brisk and clean on moonlit tide.

As Shetland's tea merchants, we are guided by a passion for discovery and collaboration. With access to hundreds of the world’s finest teas, herbs and spices, we blend rare aromatics and flavours to create experiences of lasting character and quality.
Current projects include invigorating health blends inspired by Shetland’s growing culture of sauna, wild swimming and wellness rituals. In contrast, we are also exploring peat-smoked, spiced teas as a bold and unusual approach to winter warmth and new depths of flavour.
